shiitakes ready for drying mushrooms

Before….

After successfully drying a surplus of chanterelles (shared by a neighbor) by setting them on top of a warm radiator, I thought the same technique would work for shiitakes, which are similarly firm and dry. And sure enough, it did. After washing and stemming the shiitakes (and saving the stems for broth, natch), I spread them on a parchment-lined baking sheet, then set the baking sheet on the warmest radiator in the house. Five days later, they were firm and dry, ready to go into a big glass jar for future use in soups and stews.
